Ingredients:

For the Bolognaise Sauce:

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons tomato puree
  • 500g (1 lb) beef mince
  • 400g (14 oz) can crushed tomatoes
  • 1 can (400g/14 oz) of tomatoes in passata, chopped
  • 1 cup red wine (optional)
  • 1 teaspoon sugar
  • Rodos bay leaves (2)
  • Salt and pepper, to taste

For the Orzo Risoni:

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 200g (1 cup) Orzo Risoni pasta
  • 500ml (2 cups) low-sodium chicken or beef broth
  • 1 cup red wine (optional)
  • 100ml (4 fl oz) of milk or coconut milk
  • 1 teaspoon sugar
  • 1 heaped tablespoon of fresh oregano leaves, chopped
  • Chopped parsley for garnish (optional)

Instructions:

Step 1: Begin by making the bolognaise sauce. In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic and sauté until the onions become translucent and the fragrant smell fills the air. About 2 to 3 minutes.

Step 2: Add the finely chopped carrots and celery and continue to sauté for another 2 to 3 minutes until vegetables are fragrant and soft.

Step 3: Stir in the tomato paste and tomato puree, cook for 1 to 2 minutes to help the tomatoes caramelize and deepen the flavor. This will give your sauce a slight reduction and depth of color. Add the beef mince and cook for about 5 to 7 minutes until the mince is browned and cooked through. The browning of the mince adds a rich, meaty flavor and helps thicken the sauce with its natural moisture.

Step 4: Add the crushed tomatoes and tomatoes in passata, along with the red wine (if using), and bay leaves. Stir well, taste and season with salt and pepper. Let the sauce simmer uncovered over low heat for about 15 to 20 minutes, stirring occasionally. The longer the sauce simmers, the more flavors will meld and the sauce will thicken.

Step 5: While the bolognaise is simmering, cook the Orzo Risoni. In another pot, heat the olive oil and sauté the chopped onions and garlic until they are translucent. Stir in the tomato paste and cook for a few minutes.

Step 6: Add the Orzo Risoni and stir to coat the pasta with the tomato and oil mixture. Gradually add the broth and bring to a boil. Reduce the heat, cover, and simmer for about 10 to 12 minutes or until the Orzo Risoni is al dente and cooked through. If the mixture is too thick, add more broth to reach the desired consistency. Give an occasional stir to prevent sticking and burning.

Step 7: Once the Orzo Risoni is cooked, add the red wine (if using), the milk (or coconut milk), sugar, and chopped oregano leaves. Mix until combined. Let the Orzo Risoni Bolognese mixture simmer for about 5 to 7 minutes to allow the flavors to blend and the sauce to thicken slightly.

Step 8: To combine the Bolognaise and Orzo Risoni, pour the Bolognaise sauce over the Orzo Risoni mixture. Stir until the Orzo Risoni is evenly coated with the sauce. Adjust the seasoning as needed. Simmer for another 5 to 7 minutes to allow the flavors to marry and the Bolognaise sauce to coat the Orzo Risoni.

Step 9: Serve the One Pot Orzo Risoni Bolognaise hot, garnished with chopped parsley if desired. Enjoy this hearty and comforting meal that’s as easy to prepare as it is delicious.

⚠️ Note: Make sure to check the pasta and sauce for doneness to ensure both the Orzo Risoni and Bolognaise are cooked to perfection.
